Slow Cooker Teriyaki Chicken
Ingredients
- 2 lbs (900 g) boneless, skinless chicken thighs
- 1/2 cup (120 ml) tamari, or soy sauce
- 1/3 cup (115 g) honey
- 1/3 cup (80 ml) water
- 1/4 cup (60 ml) mirin
- 2 cloves garlic, minced
- 2 tsp root ginger, grated
- 2 tbsp cornstarch
- 3 tbsp water
- 2 tbsp sesame seeds
- 4 green onions, chopped

Instructions
- Put tamari, honey, water, mirin, garlic, and ginger into slow cooker. Stir until combined, then add chicken. Mix to coat. Place lid on slow cooker and cook on low setting for 4 to 5 hours.
- In small bowl, mix cornflour and water together, then mix into sauce in slow cooker. Replace lid and cook on high for 30 minutes to 1 hour, until sauce has thickened.
- Remove chicken from slow cooker, shred, then return to sauce and mix gently. Garnish with green onions and sesame seeds and serve with rice.
